M&M and Chocolate Chunk Cookies


225g Soft Butter
350g Soft Light Brown Sugar
2 Eggs
1/2 Teaspoon vanilla extract
400g Plain Flour
1 Pinch of Salt
2 1/2 Teaspoons Bicarbonate of Soda
165g M&Ms
150g Broken Up Milk Chocolate

- Preheat the oven to 170C/Gas Mark 3

1- Cream together the butter and sugar until it is light and fluffy
2- Beat the two eggs and add to the main bowl before mixing it together well
3- Mix in the vanilla extract before adding the flour, bicarbonate of soda and pinch of salt
4- Keep mixing until a smooth dough is formed, it will look a lot like a cake batter then add the M&Ms and broken pieces of chocolate before mixing them in evenly

5- Cover a baking tray with a sheet of greaseproof paper and spoon some of the mixture onto it, the mix spreads out whilst cooking so allow plenty of space between each one
6- Put the tray into the oven and cook for 10 minutes until slightly brown (adjust if needed)

Note: This recipe is very spongey, for a more cookie like consistency follow my other recipe
